At the time, the human digestive system was a complete black box. Medical science was bitterly divided over how the stomach actually worked. Some doctors believed digestion was a purely mechanical process, where the stomach muscles crushed and churned food like a mill. Others thought it was a process of putrefaction or fermentation. Because opening a living human's abdomen was a guaranteed death sentence in the pre-anesthesia, pre-antibiotic era, there was no way to prove any of these theories. In 1833, Beaumont published "Experiments and Observations on the Gastric Juice and the Physiology of Digestion," a seminal text that immediately catapulted him to international fame and earned him the title of the "Father of Gastric Physiology." His reputation was forever cemented in medical history. St. Martin, however, faded back into obscurity, returning permanently to Canada and outliving his famous doctor by almost three decades.
Alexis St. Martin finally passed away in 1880 at the impressive age of eighty-three. Even in death, the medical community would not leave him alone; doctors and scientific institutions bombarded his family with requests to purchase his body to preserve his famous stomach. Unwilling to let their patriarch be a specimen for eternity, his family took extreme measures. They intentionally left St. Martin's body in the hot sun for several days to accelerate decomposition, rendering him useless to anatomists, and buried him eight feet deep under an unmarked grave to deter grave robbers.
